Jamaican Festival is a popular street food that is the perfect side dish for many dishes. It is a traditionally served with , Ackee & Saltfish, Fried Fish, Calaloo, among many other things. This can be enjoyed by itself.

1lb All Purpose Flour– > View on Amazon
1Tbsp Baking Powder – > View on Amazon
1lb Cornmeal (Refined)- > View on Amazon
1/2lb Sugar– > View on Amazon
2Tsp Salt– > View on Amazon
4Tbsp Margarine– > View on Amazon
2Cups Water

Ingredients

Step by step method

  • Step 1

    In a large bowl sift flour, baking powder, and cornmeal. Use a spoon to mix ingredients evenly.

  • Step 2

    Add sugar, salt and, margarine.

  • Step 3

    Use your hand to mix the ingredients. The dough will become flaky.

  • Step 4

    Gradually add water, just enough to bind the mixture into a manageable dough. The Dough should be of a sticky consistency.

  • Step 5

    Rub the excess dough from the sides and place dough in the middle of the bowl and allow to rest for 15 minutes.

  • Step 6

    Heat oil in Frying pan or dutch pot.

  • Step 7

    Pick pieces of dough and shape into fingers and add to the hot oil.

  • Step 8

    Cook until golden brown and floating atop the oil. Remove from pan onto a plate with a paper towel to drain. Serve hot.

Tips & variations

  • If the dough becomes too sticky sprinkle flour and knead until reached a sticky consistency.
