Jamaica Fried Bammy is a traditional cassava flatbread. Traditionally Bammy is served with Escoveitch Fish, this has been changing over recent years. Some prefer to have it as a snack with cheese, Ackee & Saltfish or by itself. It’s just a delicious treat.

I vividly recall the first time I attempted the Jamaican Fried Bammy recipe. The excitement of trying a traditional dish from my heritage filled the kitchen. It’s a process that requires a bit of patience and precision, but the end result is absolutely worth it.

To begin, I carefully removed the bammy from its packaging. The anticipation of that first slice was almost palpable. I swiftly cut each bammy into two halves, and there I had it, eight pieces of this delicious cassava goodness.

The next step was soaking the bammy in milk. I placed the pieces into a deep bowl and poured the milk over them, ensuring each one was thoroughly covered. A gentle swirl to make sure they soaked evenly, and I left them to rest for about 10-15 minutes. This short wait was a chance to savor the rich aroma of the milk melding with the bammy.

With the bammy sufficiently soaked, it was time to bring out the skillet or dutch pot. I heated some oil over high heat, the sizzle of the oil was music to my ears. As the excess milk dripped off each piece, I carefully placed them into the pot, making sure not to overcrowd. Frying them for about 5 minutes on each side, I watched in awe as they transformed into a beautiful golden brown.

Finally, with a gentle sigh of satisfaction, I removed the crispy bammy from the hot oil, letting the excess oil drain onto a paper towel. The irresistible aroma filled the kitchen, and I couldn’t wait to dig in.

  • 1 Pack of 4 Large Bammy
  • 2 cups Cows Milk
  • 1/2 cup Oil

Instructions
 

  • Remove Bammy from the pack. Cut Each Bammy in 2 Halves. You should have 8 pieces of bammy.
  • Place bammy into a deep bowl and pour the milk onto the pieces of bammy covering them. Move pieces around just to make sure each piece is soaked evenly. Soak for 10-15 minutes.
  • Place a skillet or dutch pot on the stove add oil and heat oil over high heat.
  • Drain excess milk from each piece of bammy and place in the pot. Fry 5 minutes on both sides until golden brown.
  • Remove and drain on the paper towel. Serve Hot.
