Who doesn’t love a good bread pudding? I certainly do! My Jamaican family adores this as a dessert with some vanilla ice cream after our Sunday dinner; it’s safe to say that it’s their favorite dessert. Since I make this at least once per week, I believe I have mastered my bread pudding recipe.

Here’s how it goes: I start by buttering one side of each slice of bread smoothly with 3 tablespoons of margarine to add to the overall moisture of the pudding.

Liberally butter an ovenproof baking dish with the remaining butter. Then cut or tear the buttered bread into pieces (about 1 cm across) and arrange a layer in the bottom of the dish (I prefer to cut). I sprinkle over 1/3 of the raisins, top with another layer of bread, then raisins, then with the remaining bread and top with raisins.

The next step is to grab another bowl and combine my granulated sugar, salt, cinnamon powder, allspice, eggs, and milk. I mix this thoroughly, but not excessively.

I then pour this mixture over the bread and raisins and allow it to stand for 15 minutes so that it can be absorbed into the bread pieces and fill those small spaces between. 

After allowing the mixture to stand, I bake in a preheated oven at 190°C (375°F) until my pudding is nicely puffed, well browned on top, or when a knife is inserted in the center comes out clean. At this point, my family can’t wait for it to cool before tasting. Once it is cool, you can serve it with your ice cream flavor of choice, caramel sauce, or any other topping you prefer.
