Jamaican Coconut Drops combine the tropical goodness of coconut with the sweet warmth of spices and are enjoyed by young and old alike.

Making Jamaican Coconut Drops is like creating sweet nuggets of nostalgia. This cherished recipe brings back the flavors and traditions of the Caribbean and fills the kitchen with the warm, comforting scents of home-cooked delights.

The journey begins with a pot of water set to boil. It’s the start of something special, the foundation for the sweetness to come. Diced coconut is added to the boiling water, and it’s like an invitation for the tropical essence of the islands to infuse into the dish.

As the coconut simmers, I add sugar and ginger to the pot, and the kitchen is filled with the delightful aroma of sugary sweetness and warm spice. The mixture continues to bubble and transform, thickening into a syrupy delight over the next 30-35 minutes.

Once the mixture has reached the perfect consistency, it’s time to shape the drops. With a tablespoon, I scoop the syrupy mixture onto a green banana leaf or a wet cookie sheet. These small, sticky morsels are like golden nuggets of joy, each one embodying the flavors of the Caribbean.

The drops are allowed to cool, a moment of anticipation as they set into their final form. The kitchen is filled with the scent of warm coconut and sugary sweetness, and it’s almost impossible to resist a taste.

Jamaican Coconut Drops aren’t just a sweet treat; they’re a connection to tradition, a reminder of the flavors of the islands, and a heartfelt delight. Share them with loved ones, and savor each nugget of this beloved classic.

Tips & variations

  • Use freshly grated coconut for the best flavor and texture. You can find grated coconut in some stores, but if you have access to a whole coconut, grating it yourself is ideal.

  • Adjust the amount of sugar to suit your taste. Some variations can be quite sweet, so feel free to add more or less sugar according to your preference.

  • Keep your drops in an airtight container to maintain freshness. They can last for several days if stored properly.
