Jamaican Pumpkin Rice is a healthy, enjoyable dish made from white rice and pumpkin. This is easy to make and may be served for lunch or dinner with preferred protein and/or vegetables.

Step by step method

    Heat margarine in a large sauce pan and saute garlic, onion, escallion and pumpkin for about 3 minutes.

    Add water, coconut milk powder and cock soup mix, stir well and bring to a boil for 5 minutes.

    Add rice, thyme and scotch bonnet pepper. Adjust salt content if necessary and simmer for 25-30 minutes or until rice is fork tender.

    Remove thyme and scotch bonnet pepper, then use a fork to fluff rice.

Tips & variations

  • Pumpkin may be substituted with calloloo. May be served with preference of meat and/or vegetables
