Jamaican Toto is a traditional dessert often made by “older” Jamaicans and enjoyed not only as a dessert but also as a snack. Experience the exotic flavors of the Caribbean with our delightful Jamaican Toto recipe. Toto, a traditional coconut cake from Jamaica, is a mouthwatering treat that embodies the warmth and vibrancy of the islands.

It all begins with a large bowl, where I combine baking flour, brown sugar, milk powder, grated coconut, raisins, baking powder, and a pinch of aromatic mixed spice. In a separate bowl, I whisk eggs and add water, a dash of vanilla, and some melted margarine. The eggs are like the binding force that brings the batter to life, and the aroma of vanilla is a promise of the sweet, comforting flavors to come.

I create a well in the center of the dry ingredients and gently pour in the liquid mixture. With care, I lightly mix the batter until the liquid is fully absorbed, ensuring that the ingredients are beautifully combined.

The batter is then scraped into a generously greased baking tin, ready to be transformed into a mouthwatering treat. I place it in a preheated oven set at 180°C (350°F) and patiently wait for about 30 minutes. The kitchen is filled with the tantalizing scent of coconut and spices as the Toto bakes to perfection.

When it’s done, I remove the Toto from the oven, and the aroma is almost too enticing to resist. It’s golden brown and perfectly moist. I place it aside to cool, a moment of anticipation as the flavors meld and deepen.

Once it’s cool enough to handle, I slice the Toto into perfect, comforting pieces. Each bite is a reminder of the rich, sweet tradition of Jamaican cuisine, and every mouthful is like a taste of the Caribbean.

Tips & variations

  • A splash of vanilla extract can enhance the overall flavor of the toto.

  • Whenever possible, use fresh coconut for the best flavor and texture. Grate it finely or use a food processor for convenience.

  • For an adult twist, soak dried fruit in dark rum and fold it into the batter. Remember that alcohol doesn't fully cook off, so it's not suitable for children.
