It all begins with a large bowl, where I combine baking flour, brown sugar, milk powder, grated coconut, raisins, baking powder, and a pinch of aromatic mixed spice. In a separate bowl, I whisk eggs and add water, a dash of vanilla, and some melted margarine. The eggs are like the binding force that brings the batter to life, and the aroma of vanilla is a promise of the sweet, comforting flavors to come.
I create a well in the center of the dry ingredients and gently pour in the liquid mixture. With care, I lightly mix the batter until the liquid is fully absorbed, ensuring that the ingredients are beautifully combined.
