Mix all the ingredients until you have a smooth batter.
Preheat your oven to 350°F.
Grease a baking sheet and pour the pumpkin mixture into the greased baking sheet.
Bake in the preheated oven for about 40 minutes, or until a toothpick inserted into the center comes out clean.
In a separate bowl, combine the following ingredients: 1 cup of softened cream cheese,1 cup of softened margarine, 2½ tsp of vanilla, 1 tsp cinnamon, 2 cups of powdered sugar
Mix the ingredients until you have a smooth and creamy cream cheese frosting.
Once the pumpkin squares have cooled, spread the cream cheese frosting over the top.
Tips & variations
Make sure to use canned pumpkin puree (not pumpkin pie filling) for the best results. It provides the rich pumpkin flavor without added spices or sweetness.
If you're in a warm environment or if the cream cheese frosting is getting too soft, you can refrigerate the pumpkin squares to set the frosting before cutting.
To get clean, even squares, use a sharp knife, and you can wipe it clean between cuts for a neater presentation.
