This Spicy Chicken Chow Mein is super easy to make and can be on prepped and on the table in less than 45 mins.

I vividly remember the first time I ventured into the world of spicy chicken chow mein. The aroma of the marinating chicken was a tantalizing promise of the flavor explosion to come. I carefully placed the chicken in a bowl and added all the marinade ingredients, then gave it a good toss, making sure each piece was coated in the mixture. I left it to soak in all those rich flavors for about 15 minutes.

In another corner of the kitchen, a pot of water was bubbling away. I dropped the noodles in, and I watched as they transformed from stiff strands to pliable, enticing ribbons of goodness. After they reached that perfect state of just becoming tender, I drained them and gave them a refreshing rinse under cold water to halt any further cooking. The noodles were now ready to absorb the bold flavors of the spicy sauce.

I added the groundnut oil to the wok and with a careful hand, I added the marinated chicken, which instantly erupted in a symphony of sizzling and aromatic spices.

Once the chicken was ready, with another tablespoon of oil, the garlic, ginger, and spring onions were placed into the wok, infusing the air with their savory fragrance. I then added the pak choi, to keep the dish fresh and crisp.

And then, to top it all off. I added in the noodles, drizzled soy sauce, and a touch of rice wine, combining all the elements. The chicken was then added back to the wok, and the final toss was done to blend everything together.

A final drizzle of sesame oil added a layer of richness. With warm bowls in hand, I served up the spicy chicken chow mein.

Tips & variations

  • Give the chicken ample time to marinate, at least 15 minutes, to allow the flavors to penetrate the meat. For even more depth of flavor, marinate it for a few hours or overnight in the refrigerator.

  • Ensure your wok or pan is extremely hot before adding the chicken. This quick searing at high heat helps lock in the juices and create that appealing dark golden color.

  • Keep the vegetables crisp and vibrant by cooking them just until they're tender. Overcooking can make them mushy and lose their color.

  • For a burst of freshness, garnish with fresh cilantro, basil, or green onions before serving.

  • Swap the chicken for shrimp for a seafood twist. Shrimp cook quickly and pair well with the chow mein flavors.
